Overwintering Cauliflower

I would like to try overwintering cauliflower, getting the plant to grow sometime in the fall with the hope of it producing a head in the spring. Because of my winters, I would protect the plants in a low tunnel with either row cover, or plastic or both. I had broccoli that did fine all winter just under the row cover.

My question is whether or not it is worth it to purchase an over-wintering variety or just sowing some more standard cauliflower late enough in the season before it forms a head. Any thoughts?
