Plumping artichokes

Hello! I'm on my third year with two artichoke plants that I got from Lowes. The first two years, the artichokes' flesh (the part you eat) was "stringy" so I let them bloom, hoping that it would help strengthen the plants. This year, the artichokes look a little plumper so I'm hoping we can actually eat them. If not, is there anything I can do, whether now or after I cut them down for winter, that will help make them more edible? Thanks in advance!
