Pruning espaliers

Hi Everyone,

I have a 5-year old Fuji apple tree that I have been training as an espalier and this is the first year of it ever having fruit (75 at last count!). One of the books I have been using for espalier instructions mentioned late summer pruning to maintain the tree's shape. My question is: is it okay to do late summer pruning when the tree is loaded with fruit (and presumably needing all its leaves to support the fruits)? I was not concerned about summer pruning last year because it had no fruits then. Responses appreciated. Thanks!
