If you have plants still growing I'd leave them. Green plants=growing potatoes. ;)

You can harvest a few small early potatoes but let the rest continue to develop till the plants turn yellow/brown and fall over. I then usually wait about a week before digging them up and air drying (do not wash them).

Granted you do run a small risk of pest attack or rot if you get some chronic rains but if well mulched to avoid sunburn they are fairly well protected.

They will likely store better in the ground until fall than they would in most home storage.
