I have no answer to your question, but I also have an espalier question -- may I will piggy-back here?

I am Zone 5 in North Idaho, and I have a south-facing (well, SSW) wall I'd like to espalier a fruit tree on. Light/heat shouldn't be a problem, but wind might be -- it can be very windy here, and this location is only semi-protected from it.

So, what can I grow? I'd really like to do something I couldn't grow here otherwise -- peaches? Figs? Lemons? Okay, probably not lemons. :) If wind is a serious problem, I can probably make some kind of screen...

I understand what you're looking at doing. I would recommend against it...the mixing of tree types. Maybe just apples and pears or plums and cherries. I'd scratch the apricot for that. They can barely grow in my zone 5 here (Sheboygan). If you do choose to grow the apricots I'd grow them in a more sheltered place in your yard.
