I would only head back a young tree when it is dormant. It needs energy to grow its roots and pruning off growth now will mean your roots will grow slower. Most root growth is in the late summer and fall. On the other hand when your tree is big, you can prune now ("summer prune") and that will limit the amount of root growth and keep your tree from getting too big.

Just leave them until they get bigger and that way they'll come into bearing sooner. I would suggest placing limb spreaders as soon as there are scaffold branches, an important task often overlooked by beginning orchardists.

I'd pinch the tips off to force branches lower on the stem. Works wonderfully. Use clothes pins to guide new branches 90 degrees out.

A tree grafted this last spring will be no more than a whip and should be allowed to grow full speed this summer. It will be loaded with stored energy and ready for the first pruning when next DORMANT. Al
