Just going by size, habitus and color it could could be a Cercis.

Red bud is Cercis canadensis, but I'm not 100% sure

Yep, I would just say they are Cercis canadensis.

Would need to see a close up of the flowers but they sure look like flowering plums, Prunus ceracifera.

They are Redbuds.

I wasn't honestly sure since the one I planted looked different. The buds came out a light pink, but as the weeks have progressed it has taken on that standard lavender color and the stalks have branched out a bit.

I agree - but if you can pick up a fallen blossom it will be obvious. Cercis are Legumes.
