Overwintering Papyrus and Iris- Need Help

I came home from my local yardwaste site with some new treasures for next year, but I don't know what to do with them for the winter. I have an Iris that was in water, the guy who handed it to me said it was yellow and was in water. I think it's called a Flag Iris? The Papyrus is a piece that I cut off of a larger plant. It had a canvas/mesh type fabric on the bottom, and just some gravel on top. It looked like it was only in a few inches of water. Any clue how to overwinter these plants? Thanks.
