Take a look at Ben Moore's constellation AF 540 in pearl. It is not exactly the color in your granite which I like. Think your walls should not be too matchy with your granite. Beautiful choices.

I used a similar tile in a home in San Antonio. I chose a creamy white.

I really like your choices. My floors are rather similar. If you have interesting furnishings or artwork then I would keep the walls light and neutral; especially if you are concerned with it not feeling dark. This pretty off white has a blue undertone in its grayscale- BM 864 oyster shell. While it doesn't say beach outright, it is an excellent backdrop to let your furnishing make the statement.
