Specimen Tree windy location, Fig??

I am in north San Digo county about 15 miles inland, 1000 ft above sea level in a windy location.

I want to replace a dead oak tree. It is featured on a knoll. I like the look of the dead branches on the oak but they have been falling off over time.

Size isn't a problem. However I think something thirty to fifty feet with interesting branching would be about right. I want little to no watering once established.

Prefer non native because I don't want to encumber my land.

Prefer fire resistance.

I was thinking apple. Now I am wondering about Mission fig. Will fig grow in a windy location? I have planted a lot of Carob here but they are a bit slow growing however it is fire resistant which is a plus. California peppers blow over in heavy wind. I don't want to deal with Brazilian pepper root suckers in this location.
