Usually there are little baby leaves poking up out of the crown within a week or so. If you pinch the center crown does it feel mushy (rotten) or firm (still alive)??? I try to buy only the crowns that have green leaves just to be sure they are still alive.

Strawberries are pretty tough, a full and healthy plant can eventually grow from a dried up fragment of the crown. Don't give up right away, but they should be showing signs of life by now.

I would give it some time. If they should fail, I would recommend you give Chandler strawberries a try. I've grown Ozark Beauty and the Chandler variety, and Chandler is much better suited for our region and is a far better berry.
