There are several varieties of Swiss Chard that would work well for a center piece in a large pot. It does well in winter here and comes in a variety of colors. It is easily started from seed too. There are also other Mustards and Cabbages that get some height to them and do well here for winter pots.

We found a couple of arborvitae for a good price at HD. We are using swiss chard in another container, and it does look good with its purple stems.
