Sure---I do this all the time. You do want a second rack between the layers to keep heating even and everything upright.

I love those really short wide-mouth half-pints, too. Make it easy to scrape the very last bit of goodness out of the jar!

Yes, a rack at the botttom and between layers is a very good idea. I use a cut out piece of punched aluminium I bought from Home Depot. Its pierced with triangular holes throughout and is only a 1/64 inch thick so can be cut with some sharp scissors. It comes in a big 2x4 foot sheet, quite cheap however. If doing in a BWB, also add a tablespoon of white vinegar to the water to reduce the mineral deposits.

I think I'll need to be adding the vinegar to reduce those deposits in my pressure canner.

So how do I clean up those mineral deposits once they have formed? I know I read it somewhere but now I'm searching and can't find it again.

A little full strength vinegar or lemon juice should loosen the white film of calcium/lime. Bacially you need to lower the pH of the white crust somehow. They also sell a product called "CLR" that has an acid in it to remove Rust, Lime, and Calcium deposits. Quite strong, but effective.
