Rhubarb Jam

My favorite jam so far is rhubarb. I have only made jams and jellies for a few years now. IÂve made plum, raspberry, rhubarb, and plum rhubarb. I have to say that the rhubarb is the standout so far. In addition to it tasting the best (to me) it is also the easiest one to grow and prepare. No tree to spray, no pits to remove, no fruit litter to pick up, no insects, no animal problems, easy to pick, available all season.

I agree with you, I make some thinner so I can have it over ice cream.

Oh.... how I wish I could grow Rhubarb here, but it's just too hot in the summer. I do LOVE rhubarb.

Oh yes, I agree, I love rhubarb. By the time I'm done baking pies, though, I seldom have any left for jam!

I guess I need to plant more...

    fredsoldhouse,

I made rhubarb-ginger this year --- yum! Agree with you that it's a great plant. Underappreciated! (Do you know it used to be called "pie plant" in the 19th century?) Like Annie, I think I should plant more! My plant has been in big pot for several years while I dithered about where to put it permanently in the garden. Even so, it produced enough for a batch of jam and a bout of baking last year. This spring I promised it I'll give it a real home in the ground.....

P.S. I've canned a rhubarb-raspberry sauce some years; great over ice cream or over oatmeal in the winter for a burst of summer flavour!

STOP IT! ALL OF YOU! STOP IT NOW!!! :=)

You're all making me hungry. Rhubarb jam sounds really great about now. I've got 20 packages of frozen rhubarb, I could easily make some jam, except ....

It was the first thing that went into my brand new freezer purchased Memorial Day weekend. A chest freezer. It's on the very bottom. And, the freezer is packed.

If it dig down to get the rhubarb, I'll disturb things and NEVER get it all back in.

Oh well, maybe my March or April. Or, if not, the fresh stuff will pop up in May.

    It's gonna be a LONG winter .... :=)

I'm resurrecting this old thread in the hopes that someone has a rhubarb jam recipe.

We prefer to not use commercial pectin so I presume that we'd have to use some lemon or orange or something with the rhubarb to get a set (?)

Any advice would be appreciated! Thanks.

I once made rhubarb red currant. Currants have enough pectin.

Christine Ferber uses 2-1/4 lbs diced rhubarb, 3-3/4 c. sugar and the juice of 1 lemon.

    Thanks Melly and Pixie_Lou,

That austere rhubarb + sugar + lemonjuice sounds about my speed.

Subsequent to my question I did a google search and found a long conversation from here specifically about rhubarb jam...Why this site's search engine didn't find it is a mystery. Although not THAT much of a mystery; the search function here is remarkably enfeebled and unpredictable. After seeing that I was fully expecting a dressing down about not adequately searching ;-)

I think the site may need a Frequently Asked Question department.

    Thanks again, Roof
