How do you dry it? If its not done quickly in a dehydrator, it might lose a lot of aroma. The faster an herb dries the more flavor it retains.

This will sound strange because sweet annie is considered an annual but look for plants that over winter. They will be small and bushy. These also seem to have a stronger aroma than the ones that come up in the spring.

Since my plants are generally 4+ foot my drying technique may be different than what you can use. I cut the branches off while they are blooming then tie in small bundles and hang upside down. The room I use has sun but I hang where can receive light but not direct light. I have found that is hung in the dark the leaves mold before they are dry.

Most dehydrators are too small for sweet annie and if you cut up fine enough you will have dust and nothing usable.

Thank you for suggestions. I have always air-dried Sweet Annie which also grows quite tall. Maifleur: do your branches still have the lovely aroma after they are dried? If so, that's my next trial.

Yes they do but the scent from the ones that winter over is the most intense. One thing to be aware of, not beware of, some people can have a reaction to the aroma. I took some of the dry over wintered stems to a meeting and one of the people had a bad reaction.

I love waving the stems in the air during the winter to refresh my rooms. The stems have scent but moving them around releases a quick burst of scent.

My use of Sweet Annie is in making wreaths. I will certainly try your suggestions,maifleur, and appreciate all suggestions.

I have found that only after sweet Annie seeds do I have the scent when cut and dried.
