Harvest vigorously, never more 1/3 of the living plant, by "pinching" or snipping the ends of stems. You take leaf, leaf buds, and stems. This will cause the leaf buds that are left and are the closest to the end of the stem to burst forth with leaves. With mints, this usually means a pair of buds and so it gets bushier.

Do a little reading on "pruning" and you'll get the idea if this didn't help.

FataMorgana

See the pic at the link below to see how to pinch out the flowers of basil. The process is similar if you want to pinch off the newest top growth of mint (or any other plant).

It's to encourage a bushier plant. A general rule for pruning plants is: 'Chop off its head' for a lower, squatter, fatter plant (encourage side growth); chop off the sides for a taller, skinner plant.

To me, it's a bothersome, time-consuming task, and I never bother. A pair of scissors or secateurs does the job more quickly and just as effectively. Off with its head! In short, you are pruning your plant every time you harvest some of it!

And BTW, mint doesn't need much encouragement to grow, believe me!!
