Pickled Garlic Question

I guess I'm getting too itchy to wait for fresh produce, because I bought a big bag of garlic heads from Costco the other day for pickled garlic.

Now I have two questions...Is there any way to avoid that odd, blueish green tint that it sometimes gets? The last time, I pickled a mix of small onions, garlic, jalapeno rings & carrot flowers and it was very pretty except for the odd color on the garlic.

The other thing is, while pondering the color problem, I remembered that Aka Shiso (a Japanese herb that I believe is called Red Perilla) dyes things a lovely pink color, while adding a unique flavor all it's own. Unfortunately, my plants are only about an inch and a half high at present.

So, Am I stuck using this bag up now, and buying another when the Aka Shiso is ready, or can I partially pickle the garlic or store it some how?

Oops, I thought I had 2 questions, but I have another. Has anyone pickled garlic in a salt brine like salt brined pickles or sauerkraut?
