Nice pics! Looks like your beets recovered nicely.

Oh yum, I LOVE beets. I'm seriously envious, mine won't even be planted for another couple of weeks...

Nice looking beets. Mine are already harvested into some fine cabbage/beet/tomato soup combination, that I find very nourishing on a chilly day. Served with a slice of onion/sourdough bread, really makes my day. (my cup runneth over!).

Wierd weather.. Green leafy trees and snow.. Hmm, are you sure the photos were not from my back yard taken about a month ago? Beets do like cool weather, but here I can only start them now. I like the good old trusty Detroit reds..

Forgot to mention. In a recent browsing, I discovered that Mrs. Wages is now offering pickled beet mixes, and dilly beans mixes, and also pickled vegetables mixes. On the other hand, Ball has come out with a few new tomato based mixes, one of which is Marinara sauce.

The beets look wonderful! Pickled beets were something that really got used up quick a few years ago when I made them, only the tomato products got used as much. I really crave pickled beets, I wonder if it is the iron content my poor anemic self is needing. Nobody else in the house eats them out of the jar like I do but they adore them on salads so I use a lot of them that way. I've tried several versions that called for a lot of various spices but I liked Ball's plain old pickled recipe the best. What do you plan to do with yours? Lori

    Lori,

I will pickle most of them. I too also like to eat them right out of the jar. I also like to just boil them until tender, peal them, slice add a little salt & pepper and eat while still warm.

Oh I love them pickled too. Drop in a few hard boiled eggs.....mmmm mmmmm . That is always a hit at our trap shooting picnic.

Oh, I love them any old way.
But BF doesn't like them at all, so I find they end up too far down the household priority list to grow & process. I confess I buy canned --- not the same, but I will eat them right out of the can when BF is away. Hmm; which he is right now, come to think of it. Have an idea for lunch... ;-)

Your garden is just gorgeous, btw, winemaker. Love the fence (am contemplating making one at the moment so very noticing of people's fences).
