Lemon-something

A neighbor gave me a basket of fresh lemons from her tree. Since I still have plenty of juice left from her past generousity so I was looking for something else to do with this bunch. I started the process for salted lemons to use in cooking; and once that was started began doing some experiments with: lemon zest in salt; and lemon slices in sugar. So far so good.

The other day I decided to add some of the lemon/sugar-now-liquid to some sliced strawberries to macerate. When I unscrewed the lid there was a decided escape of pressure and the liquid bubbled like champaign. It has begun to ferment and tastes really good.

So, any suggestions about what to make with my fermented lemon syrup?

I thought to make lemoncello and checked out the recipe. Nope. I suppose I could still add vodka and make a liqueur. (Everclear doesn't work for me.) Any other suggestions?
