Lemon Grass

This is my first year growing lemon grass, and it's doing great. It's up to my waist is about three feet across.

I feel like I should know this, but I'm going to ask anyway. I'm a little confused about how to use it in cooking. The recipes I've run across talk about chopping the "stalks" and using them in the recipe. So clip them down at the ground where the stalk is, correct? Do you discard the "grassy" part, or can it be used also?

I took some from the garden and chopped/minced both. The stalk definitely has more lemon smell, but the grassy part if very fragrant too, but I don't see it being mentioned in recipes as I do the stalk.

So....just the stalk, or both?
