Mint flowers are edible. Mint flowers taste like their leaves, but have a milder flavour. Use in custards, desserts and with vegetables. Mint flowers are great in Middle Eastern dishes. Here's one recipe:

Confetti Scones
2 cups plain flour
1 tablespoon baking powder
1/4 teaspoon bicarbonate of soda
1 tablespoon chopped mint flowers
1 tablespoon chopped clover blossoms
1 tablespoon chopped chive blossoms
1 tablespoon chopped dandelion flowers
1/4-1/2 teaspoon salt
1/3 cup shortening
3/4 cup buttermilk or sour milk

Combine the flour, baking powder, bicarbonate of soda, mint flowers, clover blossoms, chive blossoms, dandelion flowers and salt. Using a pastry blender, cut in the shortening till the mixture resembles coarse crumbs. Make a well in the centre. Add the milk all at once. Using a fork, stir just till moistened. Turn dough out onto a lightly floured surface. Quickly knead dough by gently folding and pressing dough 10-12 strokes or till nearly smooth. Pat or lightly roll dough to 1cm thickness. Cut dough with a floured 5cm scone cutter. Place scones 2cm apart on an ungreased baking sheet. Bake at 240C for 10-12 minutes or till golden. Serve hot.

Sorry to comment on this but I can find a answer on google but can the flowers from my spearmint plants be used to start more plants in the future like do they have seeds that produce spearmint?

Mints interbreed with alacrity so there's no guarantee plants from seed will be the same as the parent. It's so easy to grow more mint from cuttings that there's little point in using seeds if you have a specific plant you want to increase.
