Old Pickled Peppers

Hi,

I did a search and couldn't find an answer. Too many unrelated posts come up if there is an answer on another post. Anyway, I have one stray can of pickled peppers that were hiding in the back of the jelly cabinet. My husband claims they must be at least 3 years old because they are mixed and he is probably correct. Of course I somehow didn't date them. How old can pickled peppers stay good? I hope one of you experts knows.

Thanks,

Remy

If they were appropriately processed using a safe-tested recipe, and the seal is still good, they're as safe now as when they were canned.

You may find over the years that they've gotten mushy or the flavor may be less appealing (too vinegary or they've lost their "oomph") but allowing for the qualifiers above, if you like how they taste, go ahead and enjoy your "buried treasure."

Carol,
Thanks so much! They are definitely sealed properly, and I know I canned them with the proper recipe.
