Yup--those are the obvious ones. Basically, you can use herb vins in anything you would normally use vinegar or lemon juice in. Just pair the flavors. They make great vinaigrettes, for greens salads, but also for many grain or bean salads too. In small amounts for fruit options as well--like adding a splash to cobbler compote.
