I prepared my crushed tomatoes this morning, put the citric acid into the jars and filled them with tomatoes. I was called away for a long time, and when I came back the jars were completely cooled. So I dumped them into the pot and reboiled them for 10 mins, cleaned and reboiled the jars, and refilled and sealed them. Processed for the recommended time, and then thought about the citric acid. All the directions say in the recipe to put the citric acid into the bottoms of the jars before adding the tomatoes. I forgot completely to add more in before the second time I filled the jars. Can I just assume that the citric acid from the first time is still in the tomatoes and it's okay?
Or, did the reboiling ruin the acidity?
