Ball occasionally does live canning demos. They are listed at the link below. I haven't watched them, so I can't offer an opinion (I don't watch videos on my computers, because strange voices coming out of them really freak out the dogs, so I disabled all the sound cards :-)

Other than those, I haven't found anything.

Check your local extension site. They might offer free demos or low-cost hands-on classes. The MFP program however isn't low-cost.

It's funny, but once you've taken that class and then take others, or talk to people about their canning techniques, you will realize how many people are not following the latest recommendations, and putting themselves at risk!! Even the supposed "experts" teaching the classes have techniques that are all over the place as far as safety.

Not that they're free (or even cheap) but don't bother to take a class from any of the fancy kitchenware stores. They may be fine, but they may also be taught by chefs who don't know safe canning procedures (judging by some of the cookbooks and blogs out there).

I have found the Ball webinars to be a bit disorganized, but good for a beginner and nice thing is you can always ask a question and they'll address it during the webcast.
