Canning jerk sauce

I have a bunch of scotch bonnet peppers which I would like to make into a jerk sauce. I am not sure about how much acid is required in the canning process for it to be safe (I'm new to this artform) My recipe is as follows:

1 tb Ground allspice

1 tb Sugar

1 tb Ground thyme

1/2 c Olive oil

1 1/2 ts Cayenne pepper

1 1/2 ts Freshly ground black pepper

1 1/2 ts Ground sage

1/4 c Soy sauce

3/4 c Orange juice

3/4 c White vinegar

1 Lime; juice of

3/4 ts Nutmeg

2/3 ts Cinnamon

1 lg Maui onion; chopped

2 ts Salt

1 bn Green onions; finely chopped

2 tb Garlic powder

1 Scotch Bonnet pepper;

I have about 6 peppers so this recipe will be x 6.

What quantity of vinegar/citris juice do I need?

Help is much appreciated. If it's not feasible, have any suggestions as to what other canning recipe would be good for the scotch bonnets?
