More miscellaneous questions

This is a mixture of questions - cucumbers, pickles, tomatoes,...

1. I have some pickling cukes that were given to me about four days ago. I have not been able to do anything with them yet, but have kept them in the refrigerator. Do you think they'll be okay? Should I soak them in ice water for awhile before using?

2. When I have fermented the pickles, I've been using a Linda Lou recipe that calls for 8 C water, 1/2 C salt, and 1/4 C vinegar. On another thread she posted a recipe that uses the same amount of salt and vinegar, but only 6 C water. I was under the impression that the salt:water ratio was very important, so now I'm confused. Again.

3. Tomatoes. When you read about canning tomatoes, the directions are always very adamant that you should use unbruised tomatoes, and they should not come from dead or dying vines. I know several of you have said that you just cut away bad parts of toms. But what about the vine? I thought that with determinate toms the vine dies as the toms ripen, is that not right? If so, you would be picking your toms from dying (or dead) vines. Is this really a problem? I can understand not using diseased plants, but if the dying is natural, does it matter?

I had another question, but I've forgotten it.
