I wrapped all of mine in newspaper and put them in a box out of the way. Most of them ripened beautifully.

I cut mine into sections and pickle them just like you would cukes .... always a big hit after getting people to try them.

I made green tomato pickles and green tomato salsa this year. We are happy with both. There are more recipes in this thread.

Thanks for all your ideas, and especially the link, melly. I've decided to try the bread and the Italian sauce for sure. I don't think I'm ready to do any canning in Dec. so I'll save those recipes for next summer.

I sliced a bunch about 1/2"-3/4" thick and put them in the freezer for fried green toms later!

I haven't tried it yet.......but several here said DON'T thaw first. Just bread and fry while still frozen.

Better than tossing those that weren't ever going to ripen. At least I'll give it a shot and it made me feel better to put them in the freezer than the mulch pile.....at least for now!! (grin)

This is very good, it's my grandmothers recipe.

Sweet Chow-Chow

1 qt. green tomatoes, ground
1 qt. cabbage, ground
1 qt. onions, ground
1 qt. green peppers, ground
6 or 8 hot peppers, ground
1 qt. white vinegar
1 qt. sugar
1 ts. salt
1 ts. celery seed
1 ts. mustard seed
Grind the vegetables and mix with the vinegar, sugar, salt and spices
Bring to boil and cook 20 to 30 minutes
Place in scalded jars and seal.
Makes approximately 10 pints
