You could run the ebb and flow table many different ways. My preferred method is a slow trickle, essentially making the table a wide-channel NFT system.

1. The flood table should be drained between cycles. Stagnant, unairated water around the roots will deprive them of oxygen, which is not desired.

2. If you are growing the tomato plant in an ebb and flow or drip system, the container should be large enough for the root system to develop. If it is an NFT or bubble setup, a small pot is ok since the roots will be growing out into the nutrient solution.

3. That depends on the crop you need to grow. For example lettuce can handle freezing temperatures and short days, but cucumbers need lots of sun and high temperatures in order to produce decent fruits. You need to choose suitable crops for the environment or you choose the crop and control the environment to meet the requirements for that crop, i.e. heat/cool the greenhouse and supply artificial lighting if necessary.
