ES care--pruning/dead heading

I planted five ES late last summer, and they've been incredible! Probably 15 huge PINK blooms on each. My neighbors come over and ask "What do you do?" Well, not much--but thanks! In my previous garden I had several varieties of hydrangea, and I think they all bloomed on old wood. My pruning was very limited in the fall, only cutting off the drying flowers about 8-10 inches. I waited till very late the following spring to see what was really dead wood and cut that out. I always had lots of blooms. So... with ES, since they bloom on new and old wood, how do you deadhead them, and how do you prune them in fall and spring? Thanks!

PS I'm going to be working on changing them to a dark blue/purple. Anyway have good luck in changing the color of their ES?
