Generally, I prune Sarcococca after it flowers. Usually, you can shear it back or do some selective pruning to control its size and shape without large stubs left behind. It does fill back in after a few weeks and flowers right on cue the following winter.

I've only pruned the more common S. ruscifolia, the shorter growing S. hookeriana v. humilis doesn't require much pruning.
