When to harvest rose hips here?

Hi! I have some glorious looking rose hips on my rugosa roses right now but I don't know when is the right time to harvest them (just for tea, not planting). I've done some googling, and what I've found is that you harvest them after a frost... but in Victoria I don't know if that counts!

I'd try it when they look ripe. Should become more deeply colored and softer than they were earlier, yet not be starting to discolor or spoil.
