Pepper Mash Issue

Hey there - have a red habanero mash going. I put the habs in a food processor and got them finely minced, not a puree or anything, okay they are about 3 months old approximately, i have like 5 jars. i covered the top of the mash with a layer of kosher salt. put them in mason jars, boiled them for like 30 minutes.

okay every couple weeks i shake the jars, is this ok? every month or so i open them.

okay here is the deal. one of the jars of mash appears more liquid-like than the others. it appears there is liquid inside of it? also, when i opened it up to inspect, like air whooshed out, or some strange noise happened, is this normal?

any idea what is going on? perhaps i added some liquid in at the beginning and dont member if i did? it smells like straight up mash. no odd smells. any idea what could have changed the consistency?
