Red scallions with no bulbs... it makes me wonder if these are red bunching onions (Allium fistulosum). Some of those, such as "Red Beard" and "Get Set Red", develop stems that are at least partially red. Bunching onions are winter-hardy with only minor mulching, so if that is what you have, they should winter over in the ground.

But just for insurance, I would recommend digging up some plants, taking care not to damage the stem (such as by pulling). Wash the soil from the roots, wrap them in plastic, and keep them in the fridge. Transplant them back out as soon as the soil thaws.

I grew "Red Beard" last year, and was impressed with the size of the stalks... almost like small leeks. Hopefully, what you have is something similar.

Hardy, perennial spring onion, no bulb is formed; bright red attractive stalks to 35 cm will add interest to salads and stir-fries; can also be sprouted. They can be propagated from offsets once clumps are established. Cold hardy, cold also brings out the colour. Suitable for temperate, subtropical and tropical areas.
Hopefully, i will still find some viable seed left (bought on trip to the Scottish Highlands last year), and also start it in a few clumps, rather than spacing them as i did. Maybe i can have them be perennial in our zone 6ish. I am going to plant the stragglers saved - very few, in a raised mulched bed that can be easily covered should we get a big cold blast this winter ahead. They are lovely, tho the red coloring is only on the outer layers/skins. Peel them too much, and your have ordinary green/white scallions! I wonder if there is a variety that is red all the way thru? I would love to find one, if it's out there!
