Cosmo seeds vs the birds

Any suggestion as to how soon we can pick cosmo seeds for germination. The birds are beating us to the punch and leave us nothing. Can the seed heads be cut and dried inside. Help, we plant so many cosmos we'll go broke if we need to buy the seeds.
