Help - Cabinets and backsplash

Hey all - new to the forums but need some of the great opinions from readers!

I am doing a refresh of the kitchen that I acquired with my new home last year. It's an 1897 Chicago cottage, rehabbed in 2005. The bones of this kitchen are good, and the layout absolutely works for me, but the natural maple shaker cabinetry is blah blah ho hum. However, the kitchen has a beautiful gray, furniture like island with a pine top that I love, and is staying.

I am adding crown and replacing all the appliances with professional products, as well as doing some undermount lighting. The granite countertops (beige, black, a little gray and some pinks)are staying - not the color I'd pick but I cannot bring myself to replace these when there's better money to be spent.

My question(s): Paint the shaker cabinets white and have the grey island, or match them to the grey? Add a subway tile backsplash in a ceramic basic style, or will this look too busy considering I have that 4" backsplash from the original granite install? That piece is airplane-glued on -it's really not something I'd like to remove.
