Be sure to ask on the lighting forum too. They have a lot of info over there about what might work and how to install.

I can't speak to install or how to change that out but if you have an Ikea near you, they have some pretty creative track lighting solutions. Circles, S's, Z's and some with mini pendants that hang from the track.

Not all that expensive.

Are you going to keep the drop ceiling? If there's nothing in it but lighting, it's no big deal to rip it out and have more head room. Something you could do yourself. Lots of my middle-aged female unathletic neighbors have done this in the units here that had dropped kitchen ceilings. Messy, but not hard to do.
