Colors/ help for kitchen

I am busy in the middle of a project.

We have a 112 year old house the kitchen is is a narrow galley kitchen currently 7 x 15'

I am tearing out our secondary staircase (Servants staircase?)

Which will turn the kitchen into about 9 1/2 x 15' A great improvement.

We have purchased hickory cabinets. I am wide open on everything else and looking for suggestions to consider.

In my mind I have been thinking/wondering if a slate colored tile may pair well as a floor, But I can go tile or wood

Then it is thinking what about the counters. I am going granite. Open to suggestions here I really liked a stone called Alaska White, but not sure if a light would pair well with the granite, thinking perhaps I should do something more traditional and darker whether I go Blues, tans, browns, deep greens or blacks.

Wall colors, I can see a deeper red sort of an Italian influence, I can a cream or certain yellows maybe a sage....Even thought to myself, skip a color and line the walls with Hickory wood........So I am open to ideas.

Of course that still leaves the thought of wall back splashes (Above my granite back splashes) If I do a contrasting tile or stay with paint all possibilities.

I will be purchasing new Range, dishwasher, and refrigerator so I am open to color choice.....I do think probably black or white, I do not love stainless

So pretty much except for the Hickory cabinets we are a blank canvas. As it is still all undecided, I really would appreciate thoughts and suggestions that we can consider to go with for this room. Paints would probably be from HD, or BM, Flooring would also probably be purchased from HD.

I just do not want color schemes that will shrink the room, I want it to feel as open as possible!

Can you have some fun and give me your ideas and suggestions Please! I am still tearing out the stair case and rerouting some water and electrical work so I have a little time, But really have to start getting together a better game plan.
