Yep, they grow fast! You just need to have patience. The blooms will open when they're ready.

Would it be ok if i took it out of the window now and placed it on my kitchen table?

Sure! I grew loads of mine on countertops!
They just need good light to grow strong leaves, either natural light or under grow lights.

Once opened, how long do the blooms last and when they die do i cut the stalk off?

The blooms can last a week or more depending on the temperature.
