Track lighting - kitchen lighting

Never had track lighting before. In my (SMALL) kitchen thinking of a nice track light with 3 heads aimed at stove/counters and 1 pendant over the kitchen table. To get the pendant centered above the table I would have to run a short 2 foot piece perpendicular to the main track. OR ... can you simply attach the pendant and position it over the table with a hook in the ceiling? Not sure how bendable the cable is.

Can you put the track up and then easily switch, add or remove the heads and connector pieces as needed? Or do I have to have everything planned out before the electrician gets here on Monday. It would be nice to be able to experiment.

Light above sink - I want a wall mounted type light with a pull chain - want a pull chain specifically to give it a kinda vintage-industrial look, and also in this particular spot there really is no room for a light switch in the wall. Any suggestions where I might find such a thing?

The only thing you need to decide in the rough, is the feed location for the track(s). Then you can run a shorter or longer track, and add or remove fixtures at any time.
The cord on most track pendants I've seen is usually small and pliable enough to be swaged through a hook, but I can't guarantee all hanging fixtures can.
Regarding the pull chain wall sconce, there are lots out there, Google is your friend in that search. Chris

There are two different kinds of track lighting: line voltage and low voltage. I believe the kind you are talking about is low voltage which has the bendable tracks. The transformer has to be either on the light fixture or it can be hidden above the ceiling (if you have an attic). Line voltage is more traditional. Here is a picture of track lighting from my kitchen. I have three cans and two pendants. They sell connectors specifically for pendants that twist directly into the track.
