Agree. High humidity (like 90%) and very cold (right at or just above freezing). In colder zones they can be left in the ground all winter under mulch and harvested as needed. Of course you can also pickle them.

I dug them up about a month ago after having left them in the ground for the winter. After reading the first answer, I moved them out in the garage.... I don't know if it's too late, but I guess I will find out. They were awfully spongy.

Honestly, they are best stored in the soil. Dig them up as you need them.

Thanks for the message, but I did already dig them up. I did move them out to the garage, in a breathable bag and in a bin, They are still a bit spongy. I haven't had any to eat since, but I have a feeling I probably ruined the whole batch. We will find out, I guess.

No doubt they store well, and most everyone agrees they store best, in the ground. Problem for me is they are very difficult to access that way. Even with a thick layer of leaves and a tarp on top, I'd have to hope that the ground isn't frozen underneath. Hence why I store them the way I do. Dug in late-November they store in great condition until April for me, at which point they start to go downhill because of warming temps.

Ugh. I peeled one of them and they are rubbery! Yuk. I am thinking I probably need to toss them as I think I ruined them. If I try to pickle them, they will just be soft. Correct?

i store them in a pail of damp sand, in the unheated garage. i think you cold also dig them, then keep them in a hole in the garden , lightly covered with dirt and a piece of tarp. here in ct. the garage is better than under a foot-or 3-of packed snow...
