Need advice for open concept space reno

Our main floor is open concept with kitchen/breakfast nook/dining room/living room. Do we:
1) kitchen/nook have ceramic tiles and living/dining room have carpet: do we change to hardwood for the whole room? or should we keep ceramic tiles and replace carpet with hardwood?
- Kitchen island w/breakfast bar and sink with plan to change to quartz: do we knock off the breakfast bar (that's sticking out to the dining room now) and just have a flat wider countertop? Or do we keep breakfast bar as a way to separate the kitchen to block any food/water splashes from the sink.
