Mosaic tile for kitchen countertop?

Hi there, wondering if I should not even begin to think about this as a different (stylishly/funkishly) and lower-cost option for my kitchen countertop? Existing one is ugly laminate. Not wild about laminate, love wood but tons of wood around the place already, so can't overdo it. Don't like standard tile countertops. Etc etc.

Now, I understand issues of hygiene (tile) and fragility (mosaic, likely some glass at least). But on the fragility, does it not depend on the quality of the tile? And on hygiene, I feel like I'm missing something because wouldn't a good coat of marine-grade epoxy totally seal the countertop and eliminate all the maintenance issues?

Would really appreciate some perspectives. Not a lot of existing info online, apart from:

Thanks a lot!
