Well, there are hundreds of stone colors out there. To get an idea what you like, you should visit a supplier (as in where your fabricator would buy their slabs) and just walk around getting a sense for what type of colors exist.

Do something other than granite. Carrera marble would be better with Shaker, and put in cutting board tops (thick real maple) where it won't get wet, and where you'll be working. Keep it humble. the Shakers were a humble cult, and their cabinets reflect that.
