sliding patio doors in greatroom

We are building a new home in jacksonville fla. We are putting 2 sets of sliding glass doors with grids accross the back .We have 9ft. ceilings with 16ft. vault ceiling. Would you use 6ft. or 8ft. high doors. Panicing, please give me you imput. Thanks Karen
