Basil and parsley you should be good on. Basil loves heat, and is quick to germinate and grow. Parsley seeds can take a while to germ--soak them overnight first to give them a head start.

Lettuce, it depends on the variety and location where you will plant. But, it's easy and I would give it a try. If you have a semi-shaded spot it may help, but it is also possible that it will bolt quickly in heat. Harvest early as baby greens.

What would be the best way to plant the seeds? Just direct sow on top of the soil or do they need to be planted a few inches deep?

Parsley and lettuce are cool weather plants.

I'm in NY not NC and still plant all of these at this time of the year. In hotter locales, you may wish to plan more for a fall harvest and time the planting accordingly.

The seed packets should have depths. Basil and lettuce are pretty shallow--either surface pressed in, or barely covered. I don't remember parsley off the top of my head what parsley prefers.
