Looking for some kitchen layout suggestions

Hey folks. We're looking to overhaul our kitchen and perhaps change the layout. Above is what we're working with.

  • The left side is a mud room/entry we'd like to leave alone. There's a bookcase/support that acts as a divide between the kitchen, but that could be removed.
  • The right side is a wall with a 32" doorway. We'd like to remove this wall to open the space up to the dining room. There's a corner cabinet that could be removed.
  • Not pictured are kitchen windows: 2 in the entry on the left, 1 in the top-left, 1 over the sink
  • We're both avid cooks, so functionality matters.
  • Ideally we don't place a cooktop in the island or peninsula, as this would obstruct view.

Basically we'd like to reconfigure the kitchen to work and flow better, and open the space up to the dining room to take advantage of a view, but we can't seem to settle on a layout. Any ideas would be really helpful. As of right now we like the idea of a peninsula on the right.
