INDUCTION Vs. GAS

after surveying friends and sales folk still don't know which way to go.
How will the induction perform, really?

I have both and like the induction cooktop because it's so easy to clean and has a streamlined look on the benchtop, compared to all the "bits & pieces" involved with a gas cooktop. The induction I have has 2 (of 4) booster elements which work very quickly/efficiently. Induction heats the pot via electro magnetic/friction, the cooktop itself doesn't heat, it only gets transference of residual heat from the pot. Because of this induction is quite safe & certainly safer than a naked gas flame if children are in the house. I still have a lot of love for my gas cooktop though.

Induction is new and so hrd to know how it will stand up to gas over a long time if you have had electric up till now I think you will love induction if you are using gas maybe not. I have a 6 burner gas stove and a small induction burner that I use for certain things but gas is still my go to. The first thing i had to do when I got the burner is buy a couple of pots nd pans that work on it. I have really expensive pots I bougt in Italy and I love them but they don’t work on induction.

If you already have gas lines, go with gas. My thoughts are that has is a little better for resale. If you do not have gas lines to the stove, go with induction. I LOVE my induction range. It is awesome, heats fast, easy to clean. Be prepared. You may have to get rid of some of your old pots and pans if you go induction.

The majority of "real folks" that I know with induction cook tops hate them -- not sure what the balance is of hating their delicacy in cleaning versus adapting to how they behave while cooking. My mother has several burned-on stains after 6 years with hers...

We are 'real people' who cooked on an induction cooktop for 3 years in our rental. It looked better after all that time than my electric ceramic cooktop in 1 year. We loved the boost function and all of our pots worked fine. If a magnet sticks to your pots you should be fine.

My mom has an induction cooktop, she likes it better than the old electric coils it replaced, but she can't get gas in her area so she had no choice - if she did, she would have chosen gas. The biggest downside to me - it's not as easily controlled as gas (with gas when you adjust the temperature it responds immediately). I found this very frustrating when I have used this cooktop since I am used to gas. If it's up too high, I have had to remove the pan from the cooktop until it cools down. My gas cooktop can adjust from the lowest low to very high and do it immediately which I love.
