I find oregano air dries wonderfully - no oven required and that is in my damp and cool climate. Air tight storage is good long term but initially I store in paper bags to insure it is completely dried. Mold is your hated enemy in these endeavors.

Here is dry California any herb will dry on the counter in just a day or two. I keep my dry leaves crumbled in a jar in the cupboard. You could dry it on the stem, but it will take much longer.

Thanks. I dried it in the mini oven in 130 degrees, it took a few hours but stored it on the stem in a ziplock. Maybe I should bring it to a paper bag for now. But I might keep some in a jar too. I live on long island, you can dry stuff here in tge counter, its a bit muggy this week so it could take longer then 2 days. I put tge dehumidifier on, but tge ovens full proof, I might try the counter method.

Krissy, I live in Western NY State. Very moist and cool here. I dry most herbs on screens. There are a few things I put through the food dehydrator but oregano is not one of them. It air dries well here so it would at the other end of NY State from me just as well. I usually let most things stay on the screen at least a week. Hurrying storage leads to mold and loss.

Okay. I might try that air drying method in the future but so far oven drying works. I should get a dehydrator though my mini oven goes as low as 120 degrees. Yes I could see why youbwould want to make dure herbs are dry before storing as leaves thst are not dried snd stored outside a frige could mold.

I have given up on other forms of drying and exclusively use a dehydrator. It saves time and waste from improperly dried herbs. Once they are fully dried (after several days) I strip the leaves from the stems - gently: you don't want to crush the leaves until you are using them - and store them in sealed glass jars in a darkened cupboard drawer. Most are on;y kept for a year, if they even last that long. Also, I try to never take them out of the dehydrator on a humid day as they will quickly absorb that humidity.
