I think flowers probably taste better in tea. I might just keep a few flowers on for bees but I would the whoke plant ho to seed?

Your post had a lot of typos. But I think your question is whether the plant going to seed is going to make the plant unusable. Like it does with lettuce or basil, etc., where the leaves gets bitter when it goes to seed. Well the answer to that is thyme is a shrub, not an annual like lettuce and basil, so it's not using all its energy to make seeds.
